Gourmet Burger Kitchen's new ‘Jack-in-a-bun’ burger features a homemade butternut squash and quinoa patty, beetroot mayo, and Korean pulled jackfruit. It's then topped with pickled onions and rocket, served in a sourdough bun.

Pizza Express

Pizza Express have added three new vegan options to their menu: the Puttanesca Romana (jackfruit, tomatoes, olives, capers, red onion and vegan mozzarella), Peperonata (penne pasta, passata, garlic, roasted mix peppers, rocket) and a carrot cake. These join the already extensive vegan offerings.

Wagamama

Wagamama are doing a Vegan Katsu Curry! Sharing a picture on their Instagram, the chain wrote, "The rumours are true. vegan katsu curry has arrived. introducing the vegatsu, from our new summer menu. available today, nationwide. see the link in our bio for the full new menu. full of fresh summer salads, plant-based heroes and a dish to rival the chilli squid... #vegatsu [sic]".

In April 2018, Byron launched its first ever vegan burger: The Beetnik, which they say "comprises a beautifully flavoursome beetroot falafel patty, freshly made to Byron's own recipe and topped with baby kale, smashed avocado, tomato, pickled red onions, red pepper ketchup and a lime-dressed rainbow slaw."
