Preheat oven to 200°C (180°C fan) mark 6. Grease four 200ml (7fl oz) ramekins.
Step 2
Melt the plain chocolate and butter together in a heatproof bowl set over a pan of barely simmering water, making sure the bowl does not touch the water. Leave to cool for 5min.
Step 3
Meanwhile, put the whole eggs, egg yolks and caster sugar into a large bowl and whisk with an electric hand-whisk for 5-6min until moussey and thick. Sift the flour over the mixture, then fold it in using a large metal spoon. Next, fold in the cooled chocolate mixture. Spoon into the prepared ramekins and gently push 1-2 pieces of caramel chocolate in to the top of each pudding.
Step 4
Put the ramekins on to a baking sheet and bake the puddings for 8-10mins or until slightly risen and just firm to the touch. Serve immediately with a dollop of crème fraîche.
