Ingredients
½ tbsp rapeseed oil
1
onion, finely chopped
1
celery stick, finely chopped
2
garlic cloves, finely chopped

mushrooms, roughly chopped
350g
turkey mince
1tsp.
dried oregano
400g
can chopped tomatoes
300ml
hot chicken stock
200g
wholewheat spaghetti
Large handful basil, plus leaves to garnish
Directions
Step 1
Heat the oil in a large pan and add the onion, celery and garlic. Cover and cook gently for 10min. Turn up the heat slightly, add the mushrooms, turkey mince and oregano and fry for 5min.
Step 2
Stir in the tomatoes and stock and simmer for 15min. Bring a large pan of lightly salted water to the boil and cook the spaghetti according to the pack instructions.
Step 3
Chop the basil and stir it into the sauce. Drain the pasta and divide among four bowls. Spoon the sauce over and garnish with basil leaves.
