Put rice noodles into a bowl. Cover with just-boiled water and leave to soften for 5min. Drain and run under cold water. Return to bowl and stir in remaining salad ingredients.
Whisk together dressing ingredients, pour over salad and toss to combine. Serve straightaway or chill for up to a day ahead.
