We've turned the popular summer cocktail into delicious ice lollies, perfect for a hot summer's day! Pimm's is quintessentially British, making it the perfect thing to celebrate the king's coronation with.
Pimm's flavoured ice lollies are studded with strawberries, cucumber and mint-delicious!
In a medium pan, heat 125ml (4fl oz) Pimm’s, 100g (31/2oz) caster sugar, the stalks and half the leaves of 2 mint sprigs (reserve remaining leaves), 5cm (2in) piece cucumber (chopped) and 4 large chopped strawberries, stirring until sugar dissolves.
Step 2
Strain into a jug (discard mint, cucumber and strawberries).
Step 3
Add 450ml (3/4 pint) clear lemonade and divide between 10 x 75ml (3fl oz) ice lolly moulds – the mixture shouldn’t fill moulds completely.
Step 4
Press a few reserved mint leaves, quartered strawberries and thin cucumber slices into each mould. Cover with mould lid and insert sticks.
Step 5
Cover with mould lid and insert sticks. Freeze until solid. To serve, remove from freezer 10-15min before lifting out lollies.
