If you're a vegetarian or just looking to cut down on your meat intake, these grated courgette burgers are a perfect option to serve at your next summer BBQ.
The burgers are made with grated courgette, shallot, fresh ginger, green chilli and wholegrain mustard.
This recipe is super speedy, only requiring 15 minutes in total, so makes a perfect midweek meal option for a lighter dinner option.
Squeeze out as much liquid as you can from 1 medium grated courgette. Put courgette into a bowl with 1 finely chopped shallot, 1tsp each grated fresh root ginger, finely chopped green chilli and wholegrain mustard, 1 medium egg, 50g fresh white breadcrumbs and 2tbsp roughly chopped fresh coriander. Mix well, season and shape into two patties.
Step 2
Heat 1tbsp vegetable oil in a frying pan and fry patties for 5min, turning once, until golden and crisp.
Step 3
Serve in toasted burger buns with lettuce.
