Best honeycomb recipes
Homemade honeycomb is a delicious addition to desserts, such as an ice cream bomb or a parfait. It also makes a wonderful gift.

Honeycomb only needs three ingredients - caster sugar, golden syrup and bicarbonate of soda. However, despite being easy on the shopping list, honeycomb recipes will require TLC at the stove. And although the actual process of making it isn't time consuming it can go wrong if not given the time it needs.
But, we think homemade honeycomb, or cinder toffee as it is sometimes known, is entirely worth it - whether broken up into deliciously sweet chunks and given as a gift in a pretty tin or used in a dessert recipe. It is particularly good when paired with ice cream.
How to make honeycomb
The process of making honeycomb is fairly simple. First of all place the sugar and the golden syrup into a large pan and heat gently until the sugar has dissolved. Then turn up the heat and boil rapidly - without stirring the mixture. If the mixture gets dark in places gently swirl the pan to keep the heat even. Keep boiling the mixture till it turns a dark golden colour - it should be about 5mins.
Add the bicarb and stir instantly (the bicarb will make the mixture froth up vigorously). Then tip the mixture into your pre-prepared tin and leave to cool. Once cool it can be broken up into pieces.
For a twist on a classic honeycomb recipe we have added peanuts to make peanut honeycomb - made with roasted salted peanuts. Delicious.
We also added ground ginger to the bicarb which makes ginger honeycomb.
