Step 1Unroll pastry on to a large sheet of baking parchment and roll out a little more until the shortest edge is 30cm wide. Use to line a 21.5cm round, loose-bottomed tart tin.
Step 2Trim edges to neaten, see GH TIP. Prick base all over with a fork and chill for 20min.
Step 3Preheat oven to 200°C (180°C fan) mark 6. Line pastry case with a large piece of baking parchment and fill with baking beans. Place on a baking tray and cook for 15min until sides are set. Carefully lift out parchment and beans and return tin to oven for 10min, until base feels sandy. Remove from oven and turn oven temperature down to 180°C (160°C fan) mark 4.
Step 5Cook for 35min until a dark crust has formed on the top and thereâs a slight wobble. Remove from the oven and leave to cool completely in the tin. Dust with icing sugar, if you like and serve in slices.
GH TIP:
Always reserve your raw pastry cut-offs incase the tart cracks after blind baking it. Use these scraps of dough to patch up any cracks and return to the oven for 3min (at 180°C) to set, then continue the recipe as normal.
