Malted caramelised white chocolate rocky road recipe
An easy sweet treat you don’t need to turn the oven on to make

An easy ‘melt and mix’ recipe that you can whip up without turning the oven on. The toasty flavour of the malted milk powder really complements the caramel notes in the white chocolate, but you can use milk chocolate instead, if you prefer.
Ingredients
- 300 g
blond chocolate/caramelised white chocolate, plus extra melted to drizzle
- 1 Tbsp.
golden syrup
- 50 g
malted milk powder, we used Horlicks
- 100 g
mini marshmallows
- 75 g
chocolate covered malted milk biscuits, roughly chopped
- 150 g
Maltesers, roughly chopped
Directions
- Step 1Line a 20cm square tin that’s at least 3cm deep with clingfilm. Melt chocolate, golden syrup and malted milk powder in a large bowl set over a pan of barely simmering water. Once melted, continue heating and whisking until the milk powder has almost fully dissolved (this may take a while, and it will probably still feel a little gritty), see GH TIPS. Remove from heat and leave to cool for 10min.
- Step 2Stir in the marshmallows, biscuits and Maltesers. Scrape into the tin and spread to level. Drizzle over over the extra melted chocolate. Chill for 1hr, until set.
- Step 3Transfer the rocky road to a board, slice into squares and serve.
GH TIPS:
For an extra-smooth melted chocolate mixture you could pass it through a fine sieve into a clean bowl to get out any extra grainy bits, before stirring through the other ingredients.
Store in an airtight container at room temperature for up to 3 days.
