Cloud coffee is an iced drink that’s usually made with coconut water and espresso that’s been whisked with milk or cream until it’s very light and frothy. We’ve given the viral recipe a boozy twist using everyone’s favourite creamy liqueur, Baileys. For a speedier drink you could of course serve this iced coffee without the creamy topping… but really, where’s the fun in that?!
Ingredients
FOR THE CREAM
- 3 Tbsp.
double cream
- 1 Tbsp.
Irish cream liqueur, we used Baileys
FOR THE COFFEE
Ice
- 50 ml
espresso
- 25 ml
Irish cream liqueur, we used Baileys
Milk
Directions
- Step 1Whisk cream and the 1tbsp liqueur to soft peaks.
- Step 2For the coffee, fill a tall glass with ice. Pour in the espresso and 25ml liqueur. Top up with milk to almost fill the glass.
- Step 3Spoon over the cream and serve.
