Orginating from Lebanon, these stuffed pittas are spiced with Baharat, a spice blend of cardamom, cloves, cumin, nutmeg, coriander and paprika to make a delicious handheld pocket of goodness for easy entertaining.

Ingredients
500g
lamb mince (20% fat)
1Tbsp.
Baharat spice blend, we used Bart
2
garlic cloves, crushed
Small handful parsley leaves, roughly chopped
4
pitta breads
2tsp.
olive oil
For the loaded hummus
Juice 1 lime
1
red onion, finely sliced
1Tbsp.
olive oil
75g
green olives, pitted and sliced
2tsp.
sumac
150g
hummus
Directions
Step 1First, quick-pickle the onions for the hummus.
Mix the lime juice in a
small bowl with a pinch of
salt. Add the sliced red
onion and toss together. Set aside while you
prepare the arayes,
stirring occasionally.
Step 2In a medium bowl, mix
the lamb mince, spice
blend, garlic, parsley and
plenty of seasoning. Cut
each pitta in 1/2 to create
2 half-moons, then gently
open up each to create a
pocket. Carefully stuff with
the lamb mixture, pushing
right down to the edges.
Step 3Heat 2tsp oil in a large
non-stick frying pan over
medium heat. Working in
batches, fry the arayes
for 4min on each side,
pressing down gently with
a spatula to flatten them
slightly, until the filling is
cooked through. Remove
to a board, cover to keep
them warm and repeat
with remaining arayes.
Step 4Once all the arayes are
cooked, heat 1tbsp oil in
the frying pan and add the
olives and sumac. Cook,
stirring, for 2min until
heated through. Spoon
hummus into a serving
bowl and spoon over the
olives, along with any oil
from the pan. Top with
the pickled onions and
serve with the arayes.
