This vegetarian tart centrepiece is sure to impress and it's the perfect thing to make once the weather starts to get a little chillier! It doesn't get more autumnal than butternut squash. You can make it vegan if your puff pastry is vegan.

Directions
Step 1Line a baking sheet with baking parchment. Unroll the pastry and roll out thinner, until large enough to
cut out a rough 25cm circle. Transfer
circle to the lined sheet and prick all
over with a fork. Chill until needed.
Step 2Preheat oven to 200°C (180°C fan)
mark 6. Slice the squash neck in 1/2
lengthways, then cut each 1/2 into
1cm thick semi-circles. Empty
into a rough 20.5cm (at the base)
ovenproof frying pan and mix in
the oil, rosemary and plenty of
seasoning. Arrange slices to cover
the base, stacking slightly if needed.
Step 3Cook in the oven for 35-40min,
or until the squash is golden and
tender. Remove pan from the oven and rearrange the squash, if
needed. Gently spread over the
hummus. Lay the pastry over
the hummus layer, tucking the
edges down into the pan. Return
to the oven for 20-25min, or until
the pastry is golden.
Step 4Carefully invert the tart on to
a serving plate and scatter over
extra rosemary sprigs, if using.
Serve in slices.

Roast the squash up to 4hr ahead. Cool, cover and set aside in the pan at room temperature. Complete recipe to serve.
