Ingredients
250g
plain flour
1Tbsp.
baking powder
1tsp.
caster sugar

medium eggs, beaten
400ml
milk
100g
unsalted butter, melted
Directions
Step 1
Preheat oven to 140°C (120°C fan) mark 1 and put a large baking tray inside topped with a wire rack.
Step 2
In a large bowl, mix flour, baking powder, sugar and 1tsp salt. Whisk in the eggs, milk and melted butter until smooth. Leave to rest for 5min. Preheat waffle maker according to instructions.
Step 3
Scoop a ladleful of batter into the centre of each waffle grid; spread to cover. Close lid and cook for 6-8min until crisp and golden. Transfer to rack in oven to keep warm. Repeat to cook remaining waffles.
Just make sure you leave the waffle batter to rest for at least 5 minutes before cooking, or leave for up to 45 minutes. This is to allow the starch molecules to swell and the gluten to relax, resulting in a fluffy inside to your waffles.
Don't overfill your waffle maker (this make take a few first trial and error attempts) or you'll end up with batter spilling out over the sides of the waffle maker creating unnecessary mess on a Sunday morning! Don't be tempted to open the waffle maker too early otherwise the waffle will fall apart. Trust the timings of the recipe and only check after 6 minutes.
To freeze, pack cooled waffles into a food bag, separated with sheets of baking parchment. Freeze for up to 3 months. To serve, heat from frozen in oven preheated to 180°C (160°C fan) mark 4 for 12-15min until piping hot.
