A chicken casserole is an essential recipe - warming and comforting. It's also easy to make and this one-pot chicken casserole recipe only needs 15 mins prep time.
Brown the chicken and then soften the onions, and then later the leeks and the celery. And that's really the hard work done. Then it's just a case of returning chicken to casserole and adding wine and simmer for 3min. Then pour in the stock, herbs, potatoes and carrots and cover and simmer for 35min.

Ingredients

chicken thighs, skinless, bone in
30g
plain flour
3Tbsp.
olive oil
1 large onion, sliced
1 leek, cut into 2cm (3/4in) chunks
2 sticks celery, cut into 2cm (3/4in) chunks
100ml
(3 ½ fl oz) white wine
500ml
(17 fl 0z) chicken stock
3
sprigs plus extra to garnish

fresh bay leaf

(11oz) new potatoes, halved if large
2 carrots, cut into 2cm (3/4in) chunks

Directions
Step 1
In a large mixing bowl, toss the chicken thighs with the flour and plenty of seasoning. Heat 1tbsp oil in a heavy based casserole dish and brown 4 chicken thighs evenly until golden. Scoop out and repeat with another
1tbsp oil and the remaining chicken.
Step 2
Add the remaining oil to the casserole, gently fry the onions with a pinch of salt for 10min, covered, until beginning to soften. Stir halfway through, adding a splash of water if they look dry. Add the leek and celery and cook for a further 10min.
Step 3
Return chicken to casserole. Add wine and simmer for 3min until reduced by half. Pour in the stock, herbs, potatoes and carrots. Cover and simmer for 35min.
Step 4
In a cup, mix the cornflour with 3tbsp of the cooking liquid to make a paste. Pour into the pan immediately, bring to the boil and cook for 5min until thickened. Serve garnished with extra thyme, if you like.
