This is a super easy lasagne recipe. A classic lasagne can be time consuming but the shortcut here is to use mozzarella instead of making a white sauce from scratch, meaning there's only 20mins prep time involved.

Ingredients
1Tbsp.
olive oil
1 onion, finely chopped
400g
(14oz) lean beef mince
150g
(5oz) dried lasagne sheets, roughly broken into small pieces
400g tin chopped tomatoes
350g (12oz) tomato and basil pasta sauce – we used Seeds of Change
5g (1oz) finely grated Parmesan
150g (5oz) mini mozzarella balls, or 1 large ball, roughly torn
Directions
Step 1
Heat oil in a large, ovenproof frying pan over low heat and fry onion until softened, about 10min. Turn up heat and add mince, fry until browned, about 5min.
Step 2
Stir in lasagne pieces, chopped tomatoes, tomato sauce and 200ml (7fl oz) water. Cover and allow to simmer for 15min, until pasta is cooked through. Remove lid, stir through Parmesan and top with mozzarella
Step 3
Preheat grill. Transfer pan to grill and cook for 5min, until the cheese is melted and golden. Serve immediately.
White sauce cheat
Using mozzarella balls and grilling to melt them means you don’t have to make a white sauce to get the creamy, cheesy taste.
