Ready in only 20 minutes, this speedy chicken chow mein noodle dish is great for a midweek supper. It's totally adaptable to any veg you have in the fridge already, and we've used a shortcut ingredient: pre-made chow mein sauce, for an authentic Chinese flavour.

Ingredients
250g
dried medium egg noodles
1Tbsp.
toasted sesame oil

skinless chicken breasts, cut into thin strips
bunch of spring onions, thinly sliced on the diagonal
150g
mangetout, thickly sliced on the diagonal
125g
beansprouts
100g
cooked ham, finely shredded
120g
chow mein sauce, such as Blue Dragon
light soy sauce to serve
Directions
Step 1
Cook the noodles in boiling water according to the pack instructions. Drain, rinse them thoroughly under cold water and set aside.
Step 2
Meanwhile, heat a wok or large frying pan until hot, then add the oil. Add the chicken and stir-fry over a high heat for 3–4min until browned all over. Add the spring onions and mangetout, stir-fry for 2min, then stir in the beansprouts and cooked ham and cook for a further 2min.
Step 3
Add the drained noodles, then pour over the chow mein sauce and toss together to coat evenly. Stir-fry for 2min or until piping hot. Season to taste and serve with light soy sauce to drizzle over.
