Ingredients
- 400 g
raspberries
- 400 g
caster sugar
- 300 ml
water
juice of 1 lemon
Directions
- Step 1
Simmer raspberries, caster sugar, water and the lemon juice in a pan for 5min until fruit is broken down, then strain the mix into a sterilised jar or bottle and store for up to two weeks in the fridge.

Serve over ice, topped up with lemonade or soda water and a sprig of mint if you like.
