Kale, Anchovy and Crispy Breadcrumbs
A gorgeous main dish with a hint of spice

Ingredients
- 75 g
(3oz) fresh breadcrumbs
- 300 g
(11oz) orecchiette
- 150 g
(5oz) shredded kale
- 2 Tbsp.
olive oil
- 1
deseeded and finely chopped red chilli
- 100 g
jar anchovies, drained and chopped
- 25 g
(1oz) grated parmesan
Directions
- Step 1
Toast 75g (3oz) fresh breadcrumbs under a medium grill. Cook 300g (11oz) orecchiette according to packet instructions.
- Step 2
Add 150g (5oz) shredded kale for the final 5-6min of the cooking time. Heat 1tbsp olive oil in a pan and fry 1 deseeded and finely chopped red chilli and a 100g jar anchovies, drained and chopped, for 3-4min.
- Step 3
Drain pasta and kale and return to pan. Add breadcrumbs, anchovy mixture, 1tbsp olive oil and 25g (1oz) grated parmesan. Toss and serve.
