Instant Noodles Carbonara
We’ve turned the popular pasta dish into a super speedy noodle version!

Ingredients
- 1
x 90g bacon flavour packet noodles, we used Super Noodles
- 60 g
pancetta
- 1
medium egg
- 25 g
Pecorino, finely grated (plus extra for serving)
Directions
- Step 1Empty the noodles into a large heatproof bowl and sprinkle in the seasoning from the sachets. Pour in just-boiled water from the kettle to just-cover the noodles, making sure they are submerged. Set aside to soften for 5min, or until just cooked.
- Step 2Meanwhile, heat a medium pan over medium heat. Cook the pancetta for 5min until golden and crispy.
- Step 3 In a small bowl, whisk the eggs, cheese and plenty of freshly ground black pepper until combined.
- Step 4Take the pancetta pan off the heat and add the noodles to the pan with 40ml of the cooking water. Add the egg mixture, toss to combine, adding a little more cooking water, if needed, until glossy.
- Step 5Top with more cheese and serve.
