It might seem a bit crazy to skewer a whole gnocchi but hear us out - when you use fresh gnocchi and pan fry it, it becomes golden and crispy on the outside and pillow soft on the inside.
We then made it even better by skewering fragrant slices of chorizo and a briny green olive. It's a salty snack but perfect when served with mayo and a refreshingly fizzy cocktail of glass of Champagne.

Ingredients
200g
small cooking chorizo, cut into 5mm slices
2Tbsp.
olive oil
250g
fresh gnocchi

mayonnaise
few drops lemon juice, to taste

Directions
Step 1Put the chorizo slices in a large frying pan over medium heat and cook for 3-4min, stirring occasionally, until lightly browned and some oil has been released. Using tongs or a slotted spoon, remove chorizo to a plate, cover and keep warm. Pour the chorizo oil into a small serving bowl (you should have about 11/2tbsp); set aside until needed.
Step 2Wipe out the pan with kitchen paper. Add olive oil to the pan and put over high heat. Fry the gnocchi for 7-9min, turning often, until crisp and golden on the outside.
Step 3Meanwhile, skewer an olive and a slice of chorizo on to each cocktail stick. Whisk the mayonnaise into the chorizo oil and add a few drops of lemon juice, to taste. Set aside.
Step 4Spike a hot gnocchi on to the end of each cocktail sticks and serve with the mayo dip.
Prepare to end of step 1 a few hr ahead. To serve, warm the chorizo in a low oven briefly then complete recipe. The assembled skewers are best served fresh, while the gnocchi are hot, but will keep for up to 2hr.
If you want to make these veggie friendly, skewer with a sun-dried tomato instead of the chorizo.
