Ingredients

chutney or pickle

mini oat cakes, we used Nairn’s

small slices mature Cheddar

apple slices

small pickled (silverskin) onions, halved

small parsley leaves, to garnish
Directions
Step 1Spread the chutney or pickle over the top of 16 mini oat cakes.
Step 2Top each oatcake with a small slice of mature Cheddar and a thin slice of apple.
Step 3Top each stack with ½ a small pickled (silverskin) onion and a small parsley leaf. Serve.

What chutney or pickle should I use?
We used Branston small chunk pickle, but you could use your favourite - caramelised onion, spicy tomato, mango or even piccalilli would all work well.
Can I switch up the cheese?
Any firm, well flavoured cheese will work well, just pick one that compliments your chosen chutney or pickle (or vice versa). Lancashire, Stilton or Manchego would all be lovely.
