Enjoy this easy roasted asparagus dish alfresco in the summer months for maximum joy. Although it’s vegan-friendly, it also makes for a wonderful veggie side to grilled fish or chicken, or makes delicious dippers for soft-boiled eggs.
We have cooked our roasted asparagus with lemon and chilli to give it that extra zing and heat, but roast with just olive oil if you prefer. Serve as a side to a summer Sunday roast, with poached eggs for brunch, or with just a piece of grilled fish or chicken for something lighter.
Step 2In a medium roasting tin, toss the asparagus with the oil, chilli flakes and some seasoning to coat. Roast for 20min, until tender and slightly charred.
Step 3Sprinkle over the lemon juice and serve warm or at room temperature.
