We’ve turned the popular pasta sauce into an easy pizza topping, set on a light and fluffy dough. Be sure to top with a generous sprinkling of Parmesan once your pizza is out of the oven. We used an Ooni Karu 16 Multi-Fuel Pizza Oven.
Step 1In a large bowl, mix flour, yeast and 11⁄2tsp fine salt. Stir in 300ml tepid water to make a soft dough (add a little more water if the mixture is dry). Tip on to a lightly greased surface and knead for 10min, until smooth and elastic. Return dough to bowl, cover with a tea towel and leave to rise for 1hr, or until doubled in size.
Step 2Meanwhile, in a large bowl, stir all of the topping ingredients together until combined.
Step 3Preheat the pizza oven to 400°C. Punch the dough down in bowl, then divide in 4 equal pieces. Lightly flour a work surface and knead out each piece to a 26cm circle.
Step 4Spread the topping over the pizza bases, leaving a rough 2.5cm border. Put in your pizza oven using your pizza peel, for about 3min until crispy and golden, turning around regularly with the peel. 5 Serve straight away with extra parmesan on top.
