Pizza Oven Spatchcock Chicken and Garlic Butter Potatoes
Try cooking your dinner al fresco this summer, in your pizza oven. You will need an infrared digital laser gun if your pizza oven doesn’t have a temperature gauge. We used an Ooni Karu 16 Multi-Fuel Pizza Oven.
Step 1Preheat the pizza oven to 200°C. Oil a lipped baking sheet (one that will fit inside your pizza oven). Put the chicken on a board, breast-side down. Use sturdy kitchen scissors to cut along each side of the backbone and discard. Turn chicken over and press down hard on the breast bone to flatten it (you should hear it crack).
Step 2Put the chicken on to the prepared baking sheet, breast side-up. Nestle the garlic and lemons in the tin around the chicken. Drizzle over the oil, sprinkle over the chilli flakes and season generously. Put the chicken in the pizza oven for 30min, rotating often to prevent it getting scorched. Flip the chicken over and cook for a further 15min. Keep an eye on the chicken to prevent charring.
Step 3Meanwhile, parboil potatoes in a large pan of boiling water for 10min, or until fairly tender. Drain well and leave to steam dry for 5min.
Step 4 Meanwhile, in a medium bowl, stir together the butter with the garlic until combined. Add the potatoes and toss to coat. Tip the potatoes (along with any remaining butter in the bottom of the bowl), into a medium cast iron pan with 2 short handles.
Step 5When the chicken is cooked, remove to a board, cover loosely with foil and rest for 15min, breast side-up.
Step 6Put the potatoes into the pizza oven and cook for 15min, basting/turning them regularly to prevent charring.
Step 7Carve the chicken and serve with the potatoes, and a salad (we like peach and burrata).
