We're celebrating the Coronation weekend with lots of decorations and good music, as well as this strawberry royal cocktail which, with a little bit of forward planning, will reward you with a delicious cocktail.
This recipe uses a strawberry-infused gin as its base (which you can make in advance) and is simply topped up with Champagne, Prosecco, Cava or English sparkling wine for a refreshing and fizzy drink to celebrate with friends. It makes an ideal drink to take to street parties, or to enjoy with your favourite cakes and bakes for a sweet afternoon treat.

Ingredients
600g
hulled strawberries, roughly chopped
4Tbsp.
strawberry jam
250ml
gin
Champagne (or any other sparkling wine), chilled
Directions
1 In a medium pan over medium heat, cook the strawberries and jam, stirring occasionally, for 20min, or until mushy. Mix in the gin and remove from heat.
2 Line a large sieve with a piece of muslin (see GH TIP) and place over a jug. Add the strawberry mixture to the sieve and leave to strain, working the pulp well occasionally, for about 30min. Leave to cool completely.
3 To serve, divide the strawberry mixture between 10 champagne flutes and slowly top up with chilled champagne. Serve.

Make and strain strawberry gin mixture up to 3 days ahead. Cool, cover and chill. Complete recipe to serve.
GH TIP
If you don’t have muslin, line the sieve with a sheet or 2 of good quality kitchen paper, taking care when you work the pulp to not break it.
