Ingredients
15g
unsalted butter, softened, plus extra to grease
100g
self-raising flour
4Tbsp.
milk
1tsp.
cinnamon
1Tbsp.
soft brown sugar
For the icing
2Tbsp.
icing sugar
1/2tsp.
milk
Directions
Step 1Lightly grease a 300-400ml mug. In a medium bowl, mix the flour with the milk, using a blunt knife into a rough, shaggy dough. Tip out on to a lightly floured surface and knead until smooth.
Step 2Roll the dough out to a rough 6.5cm x 60cm long strip.
Step 3In a small bowl, stir the butter, cinnamon and sugar to form a paste. Spread mixture over the dough, leaving a 1cm border all the way around. Roll the dough up tightly, from one short end to the other, to make a swirl.
Step 4Put the roll in the mug, swirl-side up. Press the roll down with the backs of your fingers, so that it fills the mug.
Step 5Microwave at 700W for 1min 10sec (you may need to adjust cooking times depending on the power of you microwave). The roll will be cooked when it is risen and feels dry and springy to the touch when you press the centre of the top. If the dough still feels sticky or doesn’t spring back when pressed, microwave again for 30sec bursts until cooked.
Step 6Run a palette knife around the edge of the roll and turn out on to a plate. Put the roll swirl-side up.
Step 7In a small bowl, stir together the icing sugar with the milk until combined. Spoon icing over the roll and serve warm or at room temperature.
