This zesty salad with a hint of bitterness is a lovely palate cleanser served with a roast. You could add some crumbled Stilton to make this into an easy starter dish too.
With a total cook time of five minutes, this speedy chicory, green bean and clementine salad is the perfect starter dish or accompaniment to your next roast and will bring a pop of colour to your table.
The dressing is a zingy combination of clementine zest, red wine vinegar and Dijon mustard to compliment the bitter chicory leaves and fresh green beans.
The dressing can also be made up to a day ahead too so all you have to do is cook the green beans and arrange the salad on a platter dish.
Serve with a chilled glass of white wine for a complimentary drinks pairing.

Ingredients
For the dressing
finely grated zest 2 clementines
1Tbsp.
red wine vinegar
1tsp.
caster sugar
2tsp.
Dijon mustard
2Tbsp.
extra virgin olive oil
For the salad
200g
green beans, ends trimmed
4
red chicory
3
clementines (use 2 zested from dressing)
50g
walnuts, roughly chopped
1Tbsp.
chopped chives (optional)
Directions
Step 1For the dressing, in a small bowl or jug whisk all the ingredients with some seasoning until combined and emulsified.
Step 2Next bring a medium pan of water to the boil and prepare a bowl of iced water. Cook the green beans in the boiling water for 4min, or until just tender. Drain and plunge into the iced water. Cool completely, then drain well.
Step 3Peel the skin off the 3 clementines (2 already zested) and slice across the segments into 1cm thick rounds.
Step 4Trim the bases off the chicory and separate into leaves. Arrange on a large platter and scatter over the beans, clementine slices (if some break it doesn’t matter) and walnuts. Drizzle over the dressing and sprinkle over the chives, if using. Serve.
