Ingredients
500g
mussels
1Tbsp.
olive oil
2
garlic cloves, crushed
200g
cherry tomatoes, halved
40g
nduja
300g
spaghetti
Small handful parsley, roughly chopped
Directions
Step 1Put the mussels into a colander and rinse under cold running water. Scrape off any barnacles using a cutlery knife and pull off and discard any stringy beards. Discard any shellfish that don’t close when tapped firmly (it’s okay if they open again).
Step 2Heat the oil in a large deep pan (that has a lid) over low heat. Add the garlic and cook for 1min, until fragrant. Stir in the tomatoes and cook for 8min, crushing with the back of the spoon to help break them down. Stir in the nduja and cook for 2min, until melted and combined.
Step 3Meanwhile, cook the pasta in a large pan of salted boiling water according to pack instructions. Drain, reserving 250ml of the pasta cooking water.
Step 4Add 100ml of the reserved pasta water to the tomato sauce, bring to a simmer, stir in the mussels, cover with a lid and cook for 3-4min, shaking the pan occasionally, or until the mussel shells are fully open. Discard any shellfish that remain closed.
Step 5Add the drained pasta and remaining pasta water to the seafood pan and toss to combine. Toss through the parsley and season to taste. Serve.
