Grating halloumi is very common practice in Cyprus and Greece and here we've used it in place of Cheddar to give a lovely salty and lactic taste.
This easy lunchtime option only requires 5 ingredients and only takes 25 minutes of prep time too. We've used a pre-made fajita seasoning mix to add a fragrant flavour that gets gently fried in some oil and mixed with fresh tomatoes to produce a lovely, rich sauce in the quesadillas.

large tomatoes, roughly chopped

large flour tortillas

fresh guacamole, plus extra to serve (optional)

halloumi, grated
You will also need

-3tbsp olive oil
Directions
Step 1Heat 1tbsp oil in a large non-stick frying pan over medium heat and fry the seasoning mix for 1min, until fragrant. Stir in the tomatoes and cook for 5min, until starting to break down. Remove from heat.
Step 2Spread the guacamole evenly over 4 tortillas, then top with the tomato mixture and grated halloumi. Lay on the remaining 4 tortillas, to cover.
Step 3Wipe the frying pan clean, add a little oil and return to medium-high heat. Add a quesadilla and cook for 2min, until the base is golden. Carefully flip with a spatula and cook for 2min more, again until the base is golden. Slide on to a board and cover to keep warm.
Step 4Repeat frying to make 4 quesadillas, adding a little more oil between each. Serve in quarters with extra guacamole, if you like.
Use whatever ingredients you have leftover in your fridge - we think leftover shredded cooked chicken, refried beans and Cheddar would all make great additions. Feta would be a delicious cheese to use, if that's more to your taste - or use both!
Gluten-free wraps of course would be perfect for this recipe too.
