Grilling the sweet potato and halloumi speeds up the cooking time considerably. Leave out the halloumi and swap the mayo for a plant-based version to make this vegan.

These veggie burgers are ready in just 30 minutes and are absolutely delicious. To make it even speedier you can use pre-made guacamole if you prefer.
By thinly slicing the sweet potato, it means once they've been grilled it's quick and easy to assemble. You can get ahead and have everything ready and leave grilling the halloumi to the very last minute of serving.
