Quick to make, and great to throw on the BBQ - everyone will love these Greek-inspired chicken skewers.
Anyone who’s holidayed in Greece will recognise the deep resinous flavour of retsina in these skewers, but if you can’t get it (or are not a fan) any other full-bodied white wine will do nicely.
skinless boneless chicken breasts
extra virgin olive oil
retsina or other full-bodied white wine
honey (preferably Greek)
dried oregano
garlic cloves, crushed
lemon
courgettes, trimmed
large red onion, peeled and cut into 16 wedges through the root
feta cheese, crumbled
Extra virgin olive oil, to drizzle
wooden skewers, soaked in cold water for 30min
GH Tip: Don’t be tempted to marinate the chicken for longer, as the alcohol will make the meat tough.
