These veggie fajitas are packed full of halloumi, and are SUPER easy to throw together!
garlic granules
ground cumin
ground coriander
smoked paprika
mild chilli powder
dried oregano
block halloumi, cut into strips
red onion, sliced thickly
peppers, cut into strips
vegetable oil
Tortilla wraps
Soured cream
Guacamole
1. Preheat oven to 200°C (180°C fan) mark 6. In a small bowl mix together the garlic granules, cumin, coriander, paprika, chilli powder and oregano.
2. Add the halloumi, red onion and peppers to a large baking tray. Toss with the vegetable oil and the spice mix. Cook for 20min or until the halloumi is evenly browned.
3. Serve with tortillas, sour cream and guacamole.
