How we test vegan chocolate

We asked a panel of taste testers to devour 25 different brands of dairy-free chocolate. They were looking for chocolates that are a good example of their type (milk, white, dark, or blonde), with notes of cocoa and a good balance between sweet and bitter flavours.

Any additional ingredients, such as nuts, had to be well integrated and not overpowering. They also needed to have a smooth, melt-in-the-mouth texture.
