This spatchcock-style chicken lives up to its name: it is indeed tasty and very tender too. We enjoyed the comforting herby scent that really packs a punch and the rosemary, sage and black pepper also gives the meat a wonderful flavour. Despite being cooked in a bag, it had crisp, well-browned skin.

The meat is tender but the skin could be crisper.
