While many assume the baking element of the sponge cake is the hard part, it’s actually slicing it in half to slather in jam and cream that can be tricky. Trying to score through the middle of a sponge cake requires skill, and we’re often left with uneven layers and lumps and bumps where we really don’t want them.

Well there’s actually a piece of equipment that can solve the problem – a piece of string!

1. Start by gently scoring around the middle of your cake with a knife.

2. Then measure a piece of string around the cake to the right length, leaving enough that you can easily cross the ends of the string over.

3. Place the string into the groove of the scored sponge, cross the ends over and pull!
