Whisk 3tbsp pasteurised egg whites until frothy, sift in 375g (13oz) of icing sugar into the egg white and a few drops of peppermint essence; knead until smooth and roll out between parchment paper to 5mm thick. Cut out snowflake shapes with a cutter, finish with some edible glitter.
