This cocktail may sound unusual...but we promise it's delicious! Pickle juice, honeydew melon and coriander get whizzed up and mixed with vodka and vermouth to create your next favourite drink.

Ingredients
300g
honeydew melon, peeled and deseeded (prepared weight)
1Tbsp.
runny honey
Small handful coriander
150ml
vodka
50ml
white vermouth
50ml
pickle juice, from a jar of cornichons
Cornichons, to garnish
Directions
Step 1In a high-speed blender or liquidiser, whizz melon, honey and coriander until
smooth. Line a sieve
with a piece of muslin
(see GH tip) and place
over a jug. Strain melon
mixture, working pulp
well – you should get
about 200ml juice
(discard pulp).
Step 2Add juice
to a cocktail shaker with vodka, white vermouth, pickle juice and plenty
of ice. Shake vigorously
until the shaker feels
cold on the outside.
Strain into 4 glasses
and serve garnished
with a cornichon.
Pickle brines vary in sweetness. We’ve used cornichon brine for the sharpness, but you can use dill pickle juice for a sweeter take.
If you don’t have muslin, strain through a double layer of kitchen paper or a new J-Cloth, being careful not to break it when working the pulp.
