Any brunch lover in your life will be delighted by these jars of homemade pancake mix. Simple to put together, fun to decorate, and super festive with the eggnog twist, you might just be making a few batches for yourself.

Ingredients
- 1 1/2 cups all-purpose flour
- 1 cup nonfat dry milk powder
- 1/4 cup buttermilk powder
- 1/4 cup SPLENDA® No Calorie Sweetener, Granulated
- 1/4 cup cornstarch
- 1 1/2 tsp. nutmeg
- 3 1/2 tsp. baking powder
- 1 tsp. Kosher salt
Directions
- Step 1Instructions for mason jar assembly: Mix all of the ingredients together so that they are well combined and evenly distributed. Funnel dry mixture into quart sized mason jar, packing down as needed. Seal with lid and add festive ribbon and gift tag
- Step 2Instructions for making the pancakes: In a large mixing bowl add 1 ½ cups water, 1 large egg, 3 Tbsp. melted butter and 2 tsp. vanilla extract. Whisk together, then add in dry mix while continuing to whisk. The batter will be thick. Do not over-mix; let batter rest for 15-20 minutes. Once rested you will have a fluffy batter with air bubbles. Heat a nonstick pan on medium with nonstick spray or butter. Use a ¼ cup measure to drop in pancakes. Cook until golden on both sides. Serve hot with syrup.
