30 Vegan Easter Recipes for a Celebratory Sunday

Thanks to these vegan Easter recipes, plant-based eaters won't feel left out at this year's feast. When everyone else is filling up on lamb and ham recipes, vegans can nosh on meaty roasted mushrooms, colorful radish salads, and crispy smashed potatoes loaded with fresh herbs, hot sauce, plant-based Parmesan, you name it. Here's your game plan: to start, head for the apps table and scoop up creamy hummus, nutty romesco, or any other vegan dips and bites. Next, look for Easter side dishes that are veggie-forward and oh-so-delicious. Try caramelized roasted vegetables, glazed green beans, green panzanella salads and more. Don't forget to include some comfort foods like mayo-free potato salad, creamy risotto (just ditch the butter and Parm and use vegetable stock instead of chicken) and thick pieces of vegan-buttered bread.

If you can't find naturally vegan recipes for Easter that you love, feel free to make modifications to meet your dietary needs. Swap out the butter and milk in mashed potatoes for plant-based alternatives or use a flax egg instead of the regular kind in any of your favorite Easter desserts. Plus, there are plenty of dairy-free dark chocolates that you can have on hand to use in recipes or eat on their own.
