Sausage Cauliflower Skillet Casserole

Ingredients
- 1 Tbsp. plus 1 teaspoon olive oil
- 12 oz. sweet Italian sausages, casings removed
- 3 cloves garlic, finely chopped
- 1 medium onion, finely chopped
- 2 tsp. Thyme leaves
- 1 cup semi-pearled farro
- 1/2 large head cauliflower, cored and sliced
- 2 1/2 cups low-sodium chicken broth
- 1 (15-ounce) can low-sodium white beans, rinsed
- 1 cup flat-leaf parsley leaves
- Kosher salt

- 1/4 cup panko (Japanese-style bread crumbs)
- 1/3 cup finely grated Parmesan cheese
Directions
- Step 1Heat 1 tablespoon oil in large cast-iron skillet on medium and cook sausage, breaking up with spoon until browned around edges, 5 to 6 minutes.
- Step 2Add garlic, onion and 1 teaspoon thyme; cook, stirring occasionally, 5 minutes.
- Step 3Add farro, cauliflower and broth and bring to a boil. Reduce heat and simmer, stirring occasionally, until farro is tender, 28 to 30 minutes. Stir in beans, parsley and 1/4 teaspoon each kosher salt and pepper.
- Step 4Heat broiler. Combine panko with remaining tsp oil and thyme, then toss with Parmesan; sprinkle over bean mixture. Broil until golden brown and bubbling around edges, 2 to 3 minutes.
