Forget the casserole dish — this flavor-packed sausage dish can be made right in the skillet.

Ingredients

  • 1 Tbsp. plus 1 teaspoon olive oil
  • 12 oz. sweet Italian sausages, casings removed
  • 3 cloves garlic, finely chopped
  • 1 medium onion, finely chopped
  • 2 tsp. Thyme leaves
  • 1 cup semi-pearled farro
  • 1/2 large head cauliflower, cored and sliced
  • 2 1/2 cups low-sodium chicken broth
  • 1 (15-ounce) can low-sodium white beans, rinsed
  • 1 cup flat-leaf parsley leaves
  • Kosher salt
  • pepper
  • 1/4 cup panko (Japanese-style bread crumbs)
  • 1/3 cup finely grated Parmesan cheese

Directions

    1. Step 1Heat 1 tablespoon oil in large cast-iron skillet on medium and cook sausage, breaking up with spoon until browned around edges, 5 to 6 minutes.
    2. Step 2Add garlic, onion and 1 teaspoon thyme; cook, stirring occasionally, 5 minutes.
    3. Step 3Add farro, cauliflower and broth and bring to a boil. Reduce heat and simmer, stirring occasionally, until farro is tender, 28 to 30 minutes. Stir in beans, parsley and 1/4 teaspoon each kosher salt and pepper.
    4. Step 4Heat broiler. Combine panko with remaining tsp oil and thyme, then toss with Parmesan; sprinkle over bean mixture. Broil until golden brown and bubbling around edges, 2 to 3 minutes.

Nutritional information (per serving): About 460 calories, 23 g fat (8 g saturated), 22 g protein, 670 mg sodium, 43 g carb, 9 g fiber.
