Avocado and Lime Bean Bowl

Turn breakfast into a fiesta with this protein-packed bowl.

Ingredients
- 1/4 avocado
- Pinch of cumin
- Pinch of coarse salt
- 1 tsp. sunflower seeds
- 1 tsp. lime juice
- 2 bell pepper sides from Big-Batch Roasted Veggies
- 1/2 cup Citrus and Mint Berries
- 1/2 cup Breakfast Beans
Directions
- Step 1Mash avocado with lime juice and a pinch each of cumin and coarse salt.
- Step 2Spoon over bell pepper sides from the Big-Batch Roasted Veggies.
- Step 3Combine with Breakfast Beans, sunflower seeds, and a lime wedge.
- Step 4Serve with Citrus and Mint Berries.
