Thai Beef and Veggie Stir-Fry

This creamy, beefy stir-fry is best over a bed of rice.

Ingredients

  • 1 lb. beef sirloin
  • 8 oz. green beans
  • 1/4 cup Thai green curry paste
  • 1 13.5-ounce can unsweetened light coconut milk
  • 1 8-ounce can bamboo shoots

Directions

    1. Step 1Thinly slice the beef and season with 1/4 teaspoon kosher salt.
    2. Step 2Heat a large skillet on medium-high. Add 1 tablespoon olive oil to skillet and swirl; then add the beef and cook until browned, 2 to 3 minutes per side, and transfer to a plate.
    3. Step 3While the beef is browning, cut the green beans in half. Set aside.
    4. Step 4Add the Thai green curry paste and cook while stirring for 2 minutes. Whisk in the unsweetened light coconut milk and bring everything to a simmer.
    5. Step 5Add the green beans and cook just until they're tender, about 3 to 5 minutes. Meanwhile, drain the can of bamboo shoots.
    6. Step 6Return the beef to the skillet along with the bamboo shoots and heat through. Serve over cooked rice and sprinkle with fresh basil.
