Easiest Ever Pastry Dough

With the help of your trusty food processor, this buttery dough is easy as pie. Add flavor to this basic dough by trying out different flavor variations.

Ingredients

Pastry Dough

  • 1 1/4 cups all-purpose flour
  • 1 Tbsp. sugar
  • 1/2 tsp. Kosher salt
  • 1/2 cup cold unsalted butter, cut up (1 stick)
  • 1 Tbsp. distilled white vinegar
  • 1 Tbsp. ice-cold water, plus 1 to 2 teaspoon if necessary

Directions

    1. Step 1 In food processor, combine flour, sugar and salt. Add butter and pulse until mixture resembles coarse crumbs.
    2. Step 2Add vinegar and 1 tablespoon ice-cold water, pulsing until dough is crumbly but holds together when squeezed (if necessary, add remaining water, 1 teaspoon at a time). Do not overmix.
    3. Step 3Transfer dough to piece of plastic wrap and shape into 1-inch-thick disk. Wrap tightly and refrigerate until firm, at least 1 hour and up to 2 days.

This simple pastry can be turned sweet or savory by following one of these three variations:

To make Savory Thyme Pastry Dough, skip the sugar and add 1 tablespoon thyme leaves.

The Cinnamon-Sugar Pastry Dough is perfect for rugelach and other sweets. Instead of wrapping the dough, roll it between 2 pieces of parchment paper to 1/8 inch thick. Add sweetness by combining 1 tablespoon sugar and 1⁄4 teaspoon ground cinnamon; sprinkle over rolled dough and gently roll in. Refrigerate sugary-sweet dough 20 minutes before using.

To make Cheesy Poppy Seed Pastry Dough, trade out sugar for 1/4 cup each finely grated Cheddar and Parmesan and 1 tablespoon poppy seeds.
