Bring a traditional Greek meal — starring garlicky grape tomatoes and chicken kebabs — to your backyard with the help of your grill.

Ingredients

  • 1 lb. skinless, boneless chicken breasts, cut into 1" chunks
  • 3 Tbsp. olive oil
  • 1/2 tsp. ground coriander
  • 1/2 tsp. dried oregano
  • 1 pt. grape tomatoes
  • 2 cloves garlic, chopped
  • 3 Tbsp. fresh lemon juice plus wedges for serving
  • 1/2 head romaine lettuce, shredded
  • 4 green onions, thinly sliced
  • 1/2 cup dill, chopped
  • 4 pitas, warmed

Directions

    1. Step 1Heat grill on medium-high. Toss chicken with 1 tablespoon oil, then coriander, oregano and 1/4 teaspoon each kosher salt and pepper. Thread onto skewers.
    2. Step 2Place tomatoes and garlic on large piece heavy-duty foil. Sprinkle with 1 tablespoon oil and 1/4 teaspoon each kosher salt and pepper. Fold and crimp foil to form pouch.
    3. Step 3Place pouch and skewers on grill. Cook, shaking pouch and turning skewers occasionally, until chicken is cooked, 8 to 10 minutes. Just before removing from grill, brush chicken with 1 tablespoon lemon juice.
    4. Step 4Meanwhile, in bowl, toss lettuce, onions and dill with remaining 2 tablespoons lemon juice, 1 tablespoon oil and 1/4 teaspoon each kosher salt and pepper.
    5. Step 5Serve chicken, tomatoes and salad with pitas and lemon.

Nutritional information (per serving): About 415 cals, 30 g protein, 42 g carbs, 14 g fat (2 g sat), 5 g fiber, 750 mg sodium.
