Moroccan-Spiced Chicken and Couscous

Ingredients
- 12 chicken thighs and drumsticks (about 3 1/2 lb.)
- Cooking spray
- 1 tsp. cumin
- 1/2 tsp. cardamom
- 1/2 tsp. cinnamon
- 1 tsp. salt
- 1/2 tsp. pepper
- 3 1/2 cups couscous, cooked
- 1/2 cup roasted peppers, chopped
- 1/2 cup sliced almonds
- 1/3 cup golden raisins
- 2 green onions, finely chopped
Directions
- Step 1Arrange chicken on large rimmed baking sheet; spray with cooking spray. Sprinkle with mixture of cumin, cardamom, cinnamon, salt, and pepper.
- Step 2Roast in 475 degrees F oven 35 minutes or until chicken is cooked (165 degrees F).
- Step 3Toss couscous with roasted peppers, almonds, raisins, and green onions. Serve chicken on couscous.
