Chorizo-Stuffed Acorn Squash

Like an autumn version of stuffed zucchini, this acorn squash recipe is hearty and beautiful.

Ingredients
- 2 medium acorn squash, halved and seeded
- 2 tsp. oil
- 1 1/2 cups cooked quinoa
- 1 cup Manchego cheese
- 4 oz. dried chorizo, finely chopped
- 1/4 cup mild pickled peppers, drained and finely chopped
Directions
- Step 1Brush cut sides of acorn squash with oil. On large rimmed baking sheet, bake squash, cut side down, at 425 degrees F for 20 minutes.
- Step 2Combine quinoa, Manchego cheese, dried chorizo, and pickled peppers. Turn squash over on baking sheet; fill each with quinoa mixture. Bake 15 minutes or until squash is tender.
