Pork Chops with Mustard-Apricot Sauce

Ingredients
- 4 bone-in pork chops (1-in. thick)
- 1 Tbsp. oil
- 1/2 cup lower sodium broth
- 1/4 cup apricot jam
- 3 Tbsp. grainy mustard
- 1/2 tsp. pepper
- Wild rice, for serving
- Steamed green beans, for serving.
Directions
- Step 1Cook pork chops in oil 10 to 12 minutes or until cooked through (145 degrees F), turning once. Transfer pork to plate.
- Step 2To skillet, add broth, apricot jam, mustard, and pepper. Cook 3 minutes, stirring and scraping. Top pork with mustard sauce. Serve with wild rice and green beans.
