Our fresh green bean casserole with cheese, crispy breadcrumbs and meaty mushrooms in a secret-ingredient creamy sauce makes this classic Thanksgiving side dish the one thing on the table that no one will be able to resist. Plus, making a fresh green bean casserole from scratch is easier than you might think. Just blanch the green beans, sauté the mushrooms, whisk together the sauce and pour everything into a baking dish. Ingredients

  • 3 Tbsp.

    olive oil, divided, plus more for baking dish

  • Kosher salt and pepper

  • 2 lb.

    green beans, trimmed

  • 10 oz.

    mushrooms, trimmed and sliced

  • 1

    onion, finely chopped

  • 1

    clove garlic, pressed

  • 3/4

    cup milk

  • 4 oz.

    cream cheese

  • 1 Tbsp.

    Dijon mustard

  • Pinch freshly grated nutmeg

  • Pinch cayenne

  • 1/4 cup

    plus 2 tbsp. grated Parmesan

  • 2 tsp.

    grated lemon zest

  • 1 cup

    torn fresh breadcrumbs

Directions

    1. Step 1Heat oven to 400°F. Oil 2-quart baking dish. Bring large pot of salted water to a boil. Add beans and cook until just tender, 3 to 4 minutes. Drain and run under cold water to cool. Pat dry.
    2. Step 2Meanwhile, heat 2 tablespoons oil in large skillet on medium-high. Add mushrooms and cook, tossing occasionally, until golden brown and tender, 6 to 7 minutes. Transfer to bowl.
    3. Step 3Wipe out skillet and heat remaining tablespoon oil on medium. Add onion, season with 1/2 teaspoon salt and 1/4 teaspoon pepper and cook, covered, stirring occasionally, until very tender, 5 to 7 minutes. Stir in garlic and cook 1 minute.
    4. Step 4Whisk in milk and bring to a simmer. Whisk in cream cheese, mustard, nutmeg, cayenne and 1/4 cup Parmesan and simmer, stirring occasionally, until slightly thickened, 2 to 3 minutes; stir in lemon zest and toss with green beans.
    5. Step 5Fold in mushrooms and transfer to prepared baking dish. Sprinkle with breadcrumbs and remaining 2 tablespoons Parmesan and bake until golden brown, 11 to 15 minutes.
