Picnic-Perfect Chicken Cutlet Baguettes

Ingredients
- 1/2
small red onion, thinly sliced
- 1 Tbsp.
red wine vinegar
Kosher salt and pepper
- 1 lb.
boneless, skinless chicken breasts
- 1 Tbsp.
olive oil
- 6 cups
baby spinach
- 4
5-in. pieces baguette, split and toasted
Directions
- Step 1Toss onion with vinegar and 1/8 tsp each salt and pepper; let sit.
- Step 2Cut chicken into 6 thin cutlets. Heat oil in large skillet on medium-high. Season chicken with 1/2 tsp each salt and pepper and cook until browned and cooked through, 2 min. per side; transfer to cutting board.
- Step 3Add spinach to skillet, season with salt and pepper and cook until just beginning to wilt.
- Step 4Slice chicken and sandwich between baguette halves with spinach and onions.
