Quick Pork Ragu with Ravioli

Whip up this homemade ragu in just 15 minutes.

Ingredients

  • 1 lb.

    cheese ravioli 

  • 2 Tbsp.

    olive oil

  • 1

    large clove garlic (finely chopped)

  • 1 lb.

    lean ground pork

  • 1/4 tsp.

    salt

  • 1/4 tsp.

    pepper

  • 1/3 cup

    tomato paste

  • 3/4 cup

    dry white wine

  • 1/2 cup

    flat-leaf parsley (roughly chopped)

  • Grated Parmesan, for topping

Directions

    1. Step 1Cook cheese ravioli per package directions, reserving 1/2 cup cooking liquid. Drain and transfer to plates. 
    2. Step 2Meanwhile heat olive oil and garlic in large skillet on medium. Add lean ground pork, season with salt and pepper and cook, breaking up with spoon, until beginning to brown, 5 to 6 minutes.
    3. Step 3Add tomato paste and cook, stirring, 2 minutes. Add dry white wine and simmer 1 minute. Fold in flat-leaf parsley. Serve pork ragu over ravioli, sprinkle with grated Parmesan and serve with a salad if desired.
